Citrusy Olive Oil Cake

Oh, the trendy Olive Oil Cake- we had to try it! Made popular by the Kardashians, this easy breezy cake comes together so easily and is such a great cake to have around for any occasion, even breakfast.

Some key tricks to level up your Olive Oil Cake come in with the flours, good quality olive oil, and playing around with your citrus. The combo of the almond flour paired with ap flour really gives the cake the ideal texture and holds onto more moisture. You could absolutely do all ap flour but will lose out on some of that effect! Quality olive oil is also key- hey, it’s why we’re here! Using a heavier, darker olive oil will really pull the flavors together for that perfect salty, sweet, citrus combo. Lastly, go crazy with the citrus! Use orange, lemon, both (or even grapefruit). My go-to combo is one Valencia orange and one lemon. Measured with the heart.

Ingredients

  1. 1 cup all purpose flour
  2. 3/4 cups almond flour
  3. 1 1/2 tsp baking powder
  4. 1 cup sugar
  5. 7 Tbsp salted butter, melted
  6. 1/4 tsp salt
  7. 3 Tbsp whole milk, room temp
  8. 4 eggs
  9. Zest of 2 citrus
  10. Confectioners sugar for garnish

  1. Preheat oven to 350°. Grease 9 in. spring form or round cake pan. (Add round of parchment paper to the bottom for easy removal.)
  2. In medium bowl, mix cooled melted butter with olive oil and slowly stir in room temperature milk. (Be sure butter is not too hot, or milk is not too cold, as it could cause the milk to curdle).
  3. In large bowl, combine ap flour, almond flour, baking powder and salt.
  4. In separate medium bowl, add sugar, eggs, and citrus zest. Using a hand mixer on medium/high, beat eggs, sugar and zest until mixture thickens and becomes pale in color. About 3 minutes.
  5. Time to combine all ingredients. Slowly combine both bowls of wet ingredients into the large bowl of dry ingredients. Mix until just combined.
  6. Pour batter into greased cake pan and place into oven for 35 – 45 minutes. You’ll know it’s ready when it’s golden brown, a toothpick pulls clean from the center, and the sides slightly pull away from the pan.
  7. Run knife along the sides and flip onto cooling rack to cool before garnishing.
  8. Once cooled, dust with confectioners sugar and top with dried citrus, citrus zest, rosemary, etc!
