Sam’s Brownies

Growing up, my favorite thing to bake was the boxed brownie mix from Sam’s Club (LOL). It was just the right amount of chocolatey and sweet while not being too rich. Ugh so good.

Ingredients:

  • 1 1/4 cup flour
  • 1 1/4 cup sugar
  • 1/2 tsp baking powder
  • 2 oz unsweetened baking chocolate
  • 1/4 cup coco powder
  • 1 tsp espresso powder
  • 2 eggs + 1 yolk
  • 1/2 cup melted butter
  • 1/4 cup vegetable oil
  • 1 tsp vanilla
  • 3/4 cup semi-sweet chocolate chips/chopped chocolate
  • 1/2 tsp salt

Get Cookin:

  • Preheat oven to 350° and line a 9×9 pan with parchment paper.
  • Loosely break up/chop unsweetened baking chocolate and place into the bottom of a large mixing bowl.
  • In a small sauce pan, melt butter. Pour melted butter into the mixing bowl, covering the baking chocolate and stir until melted.
  • Add in sugar, vanilla, espresso powder and oil and mix until sugar is dissolved. The key here is to mix the sugar in well to create that shiny, flaky brownie top!
  • Once mixture is cooled down, add in eggs (to ensure eggs don’t cook into the mixture).
  • In a medium mixing bowl, add flour, baking powder, and salt. Mix until combined.
  • Slowly combine flour mixture into we mixture. Once combined, add in chocolate chips and mix until combined.
  • Fill lined 9×9 pan and bake for 30-35 minutes.
  • Brownies are done once a toothpick comes out clean from the center! Once cooled, optional to top with powdered sugar for a little extra flare.
  • Enjoy!
